Asia style chicken soup recipe details
Ingredients
3 | shallots, chopped |
1 clove(s) | garlic, chopped |
20 g | ginger, grated |
1 stalk(s) | lemon grass, cut into pieces |
2 | kaffir lime leaves |
1 | lime, juice and zest |
1 | chilli, chopped |
2 | chicken thighs, boneless |
3 tbsp | oil |
1 tsp | coriander seed |
2 | star anise |
800 ml | chicken stock |
1 can(s) | coconut milk |
80 g | mangetout |
80 g | green beans, frozen |
3 | spring onions, chopped |
soy sauce | |
1 tsp | fish sauce |
palm sugar | |
½ bunch(es) | coriander leaves, chopped |
Instructions
Sauté garlic, shallots and ginger in oil until golden. Add the lemon grass, kaffir lime leaves, lime juice and zest, chilli, chicken, spices, stock and coconut milk. Bring to a boil and cook over low heat for 30 minutes.Add the beans. Cook for 5 more minutes. Remove the chicken thighs. Remove the chicken meat from the bones and cut the meat into small pieces. Return into the soup, together with mangetout and spring onions. Bring to the boil again for 2 minutes. Season to taste with soy sauce, palm sugar and fish sauce.
Serve sprinkled with fresh coriander.
