Artichoke and prawns appetizer recipe details
Ingredients
2 large | artichokes |
4 | tiger prawns |
2 tbsp | olive oil |
3 sprig(s) | fresh parsley |
balsamic vinegar | |
juice of 1 lemon | |
1 medium | egg, yolk only |
salt and pepper, to taste | |
½ | lemon, cut into quarters, to serve |
Instructions
Remove outer leaves of artichoke. Trim leaves and cut into thin slices. Rub with lemon juice and cut into cubes.Heat olive oil in a pan and cook artichoke for a minute.
In another pan sauté prawns for a minute.
Combine artichoke and prawns away from the heat. Add parsley, balsamic vinegar, salt, pepper and lemon juice. Mix well.
Serve warm, with lemon quarters.
