Apple puffed pancakes recipe

- 3 large Granny Smith apples
- 3 Tablespoons butter
- 7 eggs
- 2 cups milk
- 1 teaspoon vanilla
- 3/4 teaspoon cinnamon
- 1-2/3 cups flour
- Four 11-ounce ramekins (I use Corningware individual ramekins, or deep-dish pie dish can also be used)
Preheat oven to 375 degrees. Saute apples in pan until slightly tender. Spray ramekins with non-stick spray. Divide apples into 4 dishes. Blend remaining ingredients in blender, pour over apples and bakes 45 minutes.
Serve with sausage and fresh fruit.
