Apple and cheddar vichysoisse recipe details
- Ingredients
- 1-1/2 sticks butter
- 6 leeks, sliced
- 6 green onions, sliced
- 2-1/2 pounds potatoes
- 2-1/2 pounds apples, peeled and cored
- Chicken stock
- 8 ounces cheddar cheese, grated
- 2-1/2 cups skim milk, cream, or half & half
Saute leeks and green onions in butter over low heat until soft. Add apples to leeks. Add enough chicken stock to cover apples and potatoes; bring to a boil. Reduce heat and simmer 1 hour. Remove from heat; blend and press through sieve. Add cheese and return to heat; heat slowly until cheese is melted. Add milk. Heat or chill at this time. Garnish with sauteed apple rings.
