Apple pancake with butterscotch sauce recipe details
Ingredients
125 g | plain flour |
pinch of salt | |
1 tsp | lemon rind, finely grated |
1 | egg |
300 ml | milk |
1 tbsp | vegetable oil, plus extra for greasing |
pared lemon rind, to garnish | |
For the Filling: | |
225 g | Bramley apples, peeled, cored and thinly sliced |
2 tbsp | sultanas |
For the sauce: | |
85 g | butter |
3 tbsp | golden syrup |
85 g | light muscovado sugar |
1 tbsp | rum or brandy, optional |
1 tbsp | lemon juice |
Instructions
Preheat the oven to Gas Mark 3/ 160°C/ 325°F.Sift the plain flour and salt into a bowl. Add the lemon rind, egg and milk and stir to make a smooth batter.
Heat oil in a frying pan. Make 8 thin pancakes, using more oil if required. Stack the cooked pancakes and set aside.
Filling:
Cook the apples with the raisins in a little water until soft. Divide the apples and the sultanas equally between the pancakes and fold into triangles or fold up. Lightly grease an ovenproof dish with a little oil and put the pancakes in it. Bake in a preheated oven, Gas Mark 3/ 160°C/ 325°F, for 15 minutes until the pancakes are warmed through.
Sauce:
Heat the butter, syrup and sugar together in a pan, stirring well. Add the rum or brandy, if favoured, and the lemon juice. Just heat it, do not allow the ingredients to boil.
Finally serve the pancakes on warm plates, with a little sauce and lemon rind on the top.
