Apple or rhubarb crumb cake recipe details
- Ingredients
- 1-1/2 cup whole-wheat flour
- 1-1/2 cup unbleached flour
- 2/3 cup sugar
- 1 teaspoon baking powder
- 1-1/2 teaspoons baking soda
- 2 eggs
- 2/3 cup vegetable oil
- 2/3 cup yogurt
- 1 cup buttermilk
- 1 lemon, grated and juice of
- Applesauce or apples (peeled and sliced)
- Crumb Topping
- 1/2 cup butter
- 12 cup wheat germ
- 1/2 cup brown sugar
- 1/2 cup flour
- Cinnamon
- Grated peel of 1 lemon
Mix dry ingredients (flours, sugar, baking powder, and baking soda) in a bowl. In a separate bowl, mix eggs, oil, yogurt, buttermilk, and lemon, and then add dry ingredients. Spread 2/3 of batter in 9 x 12-inch baking dish.
Thinly spread applesauce (or softened sliced apples in microwave with cinnamon) or stewed rhubarb on top of batter and add remaining batter.
Crumb Topping: Mix butter, wheat germ, sugar, flour, cinnamon, and lemon with your hands until crumbly and sprinkle crumb mixture on top of batter. Bake at 325 degrees for almost and hour until just done in center.
