Four cheese flapjacks recipe details
- Ingredients:
- 24 ounces cottage cheese
- 7 eggs, beaten
- 3 Tablespoons butter, melted
- 3/4 cup flour
- 1 teaspoon salt
- 6 ounces cheddar, shredded
- 6 ounces Monterey Jack, shredded
- 6 ounces smoked gouda, shredded
This is a great alternative to traditional pancakes! The pancakes are very rich, so you may want to make them slightly smaller than usual, and two are plenty for even your hungriest guests! You can use virtually any combination of cheeses, but I’ve listed our favorite here. Top with Sour Cream or Cinnamon Applesauce before serving.
Blend cottage cheese, eggs, and butter in large bowl. (Blend in blender until smooth if desired.) In separate bowl, combine flour, salt, and remaining cheeses. Combine cheese mixture with egg mixture. Pour batter onto hot griddle and cook until golden.
