Ingredients
450 g | fine fresh bread crumbs |
200 g | light brown sugar |
½ tsp | nutmeg, ground |
8 tbsp | butter, unsalted and melted |
200 g | rhubarb, thinly sliced |
625 g | strawberries, sliced |
Instructions
Grease a 3 litre shallow baking dish with butter. In a bowl and using a fork, stir together the bread crumbs and brown sugar. Add the nutmeg and butter and stir until all ingredients are evenly distributed.In another bowl, combine the rhubarb and strawberries and toss to mix. Sprinkle half of the crumb mixture in the bottom of the prepared dish. Spread the fruit mixture evenly over the top, then sprinkle with the remaining crumb mixture.
Bake until top is golden and the fruit is bubbling, about 45 minutes. Let cool and serve at room temperature. It is important to use a shallow baking dish so the sugar and bread crumbs have enough contact with the tart rhubarb to sweeten it.
