- Ingredients for Crust
- 1/2 cup sugar
- 1/4 teaspoon salt
- Lump butter (egg-sized)
- Egg (if desired)
- 1/2 teaspoon vanilla
- 1 cup flour
- 1/2 teaspoon baking powder
- 1/3 to 1/2 cup milk
Add sugar, salt, butter, and egg (if desired) together. Cream them, then add vanilla, flour and baking powder. Lastly, add in milk gradually. Spread dough thinly in a 10 x 15-inch pan.
Fruit: Section fruit slices. If using apples, make wedges. Apricots or pineapple rings (canned) are also very good. Place in rows along dough in pan. Melt 1/8 stick butter and pour over fruit. Sprinkle cinnamon and sugar over fruit. Cook at 325 degrees (low oven) for about 20 minutes. Now you have a wonderful open fruitcake. Enjoy!
