InstructionsStreusel is a cousin to the British crumble topping, and usually comprises the same 3 ingredients, sugar, flour and butter.
Preheat oven to Gas Mark 7, 220°C, 425°F.
Roll out pastry to ¼ inch, 6mm thick and use to line an 8-inch, 20cm flan tin.
To make the topping:
Rub butter into flour until it resembles breadcrumbs. Stir in sugar and mix well. Set aside.
For the filling:
Toss apple slices in lemon juice, cinnamon and sugar. Arrange over pastry and scatter the topping mixture over the top.
Bake for 15 minutes and then reduce heat to Gas Mark 5, 190C, 375F and bake for another 30 minutes. If the top looks as if it browns too quickly, cover it with foil.
Serve hot or cold with cream or ice cream.
