Apple Gingerbread recipe

|250 g||butter, unsalted|
|100 g||sugar, brown|
|120 ml||treacle, very dark sugar syrup|
|150 g||flour, plain|
|50 g||flour, self raising|
|1 ½ tsp||bicarb of soda|
|1 tsp||ginger, ground|
|90 g||apple, grated|
|120 ml||water, hot|
Cream butter and sugar. Add eggs. Stir in treacle and dry ingredients. Self raising flour can be substituted with plain flour and 1/2 tsp. of baking powder.
Fold in apple and hot water. Bake in lamington tin or muffin tray at 180°C for 35 – 40 minutes.
Note:It is possible to add sultanas and/or chopped nuts. Brush surface with a mixture of icing sugar and hot water. Cut into slices.
