Apple charlotte recipe details
Ingredients
1 kg | Bramley apples |
juice of 1 lemon | |
175 g | butter |
140 g | caster sugar |
4 tbsp | smooth apricot jam |
5 slice(s) | white bread, thin |
Instructions
Peel and core the apples. Slice them, place in a bowl and sprinkle over the lemon juice.In a large pan, put 25g butter with all the sugar and add the apples and the lemon juice. Put the lid on, then cook over a gentle heat for about 10 minutes, stirring occasionally.
Remove the lid and cook for a further 5-10 minutes or until smooth. Stir in the apricot jam and leave to cool.
Meanwhile, melt the remaining butter and cut the crusts off the bread. Cut the slices in half and then each half into 4 slices to get 8 small fingers. Dip each piece of bread in the melted butter and use to line 4 small dariole moulds or individual pudding basins (about 6cm wide), reserving some for the lid.
Heat oven to 180°C/160°C Fan/Gas 4.
Spoon the apple purée into each mould, then top with the reserved bread fingers to make a secure lid. Cook for about 30 minutes or until they are golden brown. If the lids have lifted a bit during cooking time, do not worry, simply press them back down gently.
Allow to stand for a few minutes, then turn out onto warmed plates and serve with a jug of cream.
