Apple and Parsnip Soup recipe

Ingredients
500 g | parsnips, diced |
1 large | apple, peeled, cored and diced |
1 l | vegetable stock |
salt and freshly ground black pepper | |
30 g | butter |
125 ml | single cream |
½ tsp | sage |
1 | clove |
Instructions
In a saucepan, melt the butter. Add the apples and the parsnips. Cover and simmer for 12 minutes. Pour in the stock and bring to a boil. Stir in the sage and the clove. Cover and cook over low heat for 15 minutes.
Remove the clove and purée the soup. Stir in the cream and cook until hot. Season to taste with salt and pepper.
Ladle the soup into soup bowls and serve.
