Apple Cake with Walnuts recipe

Ingredients
2 | eggs, weighted |
butter, softened, weight of the eggs | |
flour, weight of the eggs | |
1 tsp | baking powder |
brown sugar, weight of the eggs | |
2 handful | walnuts, chopped |
4 | cooking apples, e.g. Boskoop |
3 tbsp | apricot jam |
Instructions
With an electric handmixer, whisk the butter with the sugar until smooth. Add the eggs and whisk until frothy and the sugar is dissolved. Sift in flour and baking powder and mix until all is well combined.
Spread the batter into a buttered spring form tin. Sprinkle with the walnuts.
Peel and quarter the apples and cut 3-5 incisions into the round side of the quarters. Arrange the apples with the round side upwards on top of the cake.
Bake at 160°C (fan on) for 40 minutes.
Heat the jam in the microwave and brush the still hot cake with the jam.
