Ingredients

500 g shortcrust pastry, ready made or frozen
6 medium cooking apples, peeled, cored and thickly sliced
125 g brown sugar
50 g chopped walnuts
55 g plain flour
tsp vanilla extract
2 tbsp unsalted butter, cut into small pieces

Instructions

Preheat oven to Gas Mark 4, 180ºC, 350ºF. Lightly grease a baking tray.

Roll out the pastry to about the size of the baking tray and transfer it to the tray. Fold up the sides to a height of at least ¾ inch, 18-20 mm. Snip the corners with scissors or a shape knife and dampen the section where the corners meet with a little water. Pinch the corners together to seal.

In a bowl, mix together the apples, walnuts, sugar, flour and vanilla. Fill the centre of the pastry with the fruit mixture and then dot with butter.

Bake for 45-50 minutes, until the apples are soft and the pastry golden brown.

Cut into portions and serve immediately with cream or vanilla ice cream.
