Ingredients

800 g cheese tortellini
1  red bell pepper, finely chopped
1  yellow bell pepper, finely chopped
200 g baby carrots, thinly sliced
150 g Mozarella cheese, cubed
3 tbsp Parmesan cheese, grated
240 ml Italian salad dressing

Instructions

Cook tortellini until tender. Drain.

In a bowl combine all ingredients, except the Parmesan cheese, and toss gently. Cover and refrigerate for at least 12 hours.

To serve, spoon mixture into martini glasses. Sprinkle with Parmesan cheese.
