Tortellini al brodo recipe details
Ingredients
500 g | Tortellini |
1 l | chicken or vegetable stock |
fresh parsley, chopped | |
some | Parmesan cheese, grated, amount to personal taste |
Instructions
Bring a large pot of salted water to a boil. Add the tortellini and boil until tender for about 15 minutes. Drain and rinse in cold water.Place the chicken stock in a sauce pan and heat to simmering. Add the drained tortellini to the broth. Allow to come back up to heat. Ladle into individual bowls. Sprinkle with parsley and Parmesan cheese.
Alternatively the tortellini can also be cooked in the chicken broth from the beginning. That way they do not need draining and they can be ladled into bowls immediately.
