Ingredients
| 1 | chicken breast |
| 10 | cherry tomatoes |
| 3 clove(s) | garlic |
| ½ | red onion |
| 1.2 | red pepper |
| 1 | red chile |
| 1 | chicken stock cube, dissolved in water |
| 1 can(s) | Heinz baked beans |
| tomato puree, a squeeze | |
| 3 slice(s) | Cheddar cheese, thin slices |
| cayenne pepper | |
| Italian herbs |
Instructions
Chop the chicken breast into 1.5cm chunks and add to a large microwaveable pot. Chop and add three cloves of garlic, the chili, the red pepper and the red onion. Chop the stock cube and dissolve in a small quantity of water and pour in.Add a sprinkle of Italian herbs, if available. Add the cherry tomatoes and the squeeze of tomato puree plus a sprinkle of cayenne pepper to taste.
Pour in a couple of dessert spoons of water and microwave on high for 2 minutes.
Take out of the Microwave oven and stir around to mix well. Add the tin of baked beans and stir again. Microwave on high for about 7 minutes, or until mixture is bubbling. Place the cheese on the top and as it melts, stir in.
Serve in two bowls with a green salad and a bottle of Corona each and some corn chips.
