Ingredients
250 g | caster sugar |
250 g | ground almonds |
1 large | egg, separated plus an extra yolk |
Instructions
Please note: this recipe contains raw eggs and is therefore unsuitable for consumption by those who may be susceptible to the risks of salmonella unless appropriate precautions are taken, namely Pasteurisation.Thoroughly mix the sugar and almonds in a bowl. Fold in the yolks, one at a time.
Whisk the egg white until stiff and fold into mixture.
Line a baking sheet with foil and place the mixture on it. Press the mixture into a slab about ½ inch, 12-13mm thick using a rolling pin. Cover again with foil and place a board or other flat object over it. Place two or three full tin cans of something on top as weights. Leave for 3 days to dry out and harden. Cut into 1-inch, 25mm squares and store in an airtight container.
