Ingredients
700 g | minced beef |
1 medium | onion, chopped |
1 large | egg |
25 g | fresh white breadcrumbs |
1 tsp | salt |
2 large can(s) | tomatoes, chopped |
¼ tsp | fresh ground black pepper |
125 ml | water |
3 tbsp | vinegar |
3 tbsp | brown sugar |
2 tbsp | Dijon mustard |
2 tsp | Worcestershire sauce |
3 | rashers bacon, to cover or two trimmed cabbage leaves if preferred |
Parmesan cheese, optional |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F.
Drain one can of tomatoes and discard the liquid. Place the tomatoes into a bowl.
Add the beef, breadcrumbs, onion, egg, salt and pepper. Form into a loaf and place in a shallow roasting dish.
Combine the remaining ingredients, excluding bacon and cheese and pour over the meatloaf. Cover the top of the meatloaf with the bacon or cabbage leaves and sprinkle on the Parmesan, if wished.
Bake for an hour, basting occasionally.
Slice to serve with vegetable of choice.
