You don’t need a full oven to make great cookies. You will need some smallish baking pans that fit your toaster oven, though. Check your supermarket, or if that fails, a specialty kitchen tools store.

Ingredients

Makes: 24

• 2 1/2 cups flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1 1/2 teaspoons baking soda
• 1 cup unsalted butter
• 1 cup crunchy peanut butter
• 1 cup white sugar
• 1 cup packed brown sugar
• 2 eggs

Preparation method

Prep: 15 mins | Cook: 10 mins | Extra time: 1 hour, chilling

1. In a medium mixing bowl, whisk together flour, baking powder, baking soda, and salt.
2. In a separate mixing bowl, combine butter, peanut butter, and sugars. Whip until they get fluffy. Add both of the eggs. Gradually add the flour mixture, stirring as you go, then cover bowl with plastic wrap and refrigerate for 1 hour.
3. Preheat toaster oven to 375 degrees F.
4. Make walnut-sized balls from the dough and place on small baking sheets, then criss-cross with a fork and bake for 6 to 10 minutes.
