Homemade Applesauce meets creamy Peanut Butter in this sandwich.

Ingredients
Serves: 1- 4 Apples (cored, peeled, and finely diced)
- 1/2 cup Apple Cider
- 1/4 cup Light Brown Sugar
- 3/4 teaspoon Ground Cinnamon
- 2 slices Whole Grain White Bread
- 2 tablespoons Butter (or to taste)
- 2 tablespoons Peanut Butter (or to taste)
- 3 tablespoons prepared Applesauce
Preparation method
Prep: 20 mins | Cook: 35 mins1. Combine apples, cider, light brown sugar, and ground cinnamon in medium saucepan. Bring to a boil, reduce and simmer for 30 minutes (or until apples become soft). This can be made in advance.
2. Preheat another pan or skillet. Butter one side of each slice of bread. Grill 1-2 minutes per side. Remove bread slices from pan or skillet and adjust the heat or flame to low.
3. Place the slices onto a paper plate (grilled side down) and spread peanut butter onto one side of either slice of bread. Using a spoon, place 3 tablespoons of prepared applesauce onto the other side of the remaining bread slice and sandwich slices together (grilled side up).
4. Place the sandwich into pan or skillet and grill 1-2 minutes per side or until heated through. Cut sandwich diagonally and serve.
