Amaretto mousse with cinnamon flavoured plums recipe details
Ingredients
9 | plums, stones removed |
80 g | sugar |
200 ml | red wine |
1 pinch(es) | cinnamon |
3 | egg yolks |
80 g | sugar |
75 ml | Amaretto |
4 leaves | gelatin |
200 g | mascarpone |
200 g | whipping cream |
100 g | Amarettini biscuits, crushed |
Instructions
In a saucepan, caramelize the sugar. Pour in the wine and the cinnamon and simmer for 3-4 minutes. Add the plums and cook for some minutes. Allow to cool.Soak the gelatine in water. Whisk egg yolks with sugar and the Amaretto over a hot water bath until creamy. Squeeze out the gelatin and dissolve in the mixture. Stir in the mascarpone. Allow to cool.
Whip the cream until stiff. When the Amaretto mousse starts to set, fold in the cream. Refrigerate for 2 hours.
Fill the mousse into a piping bag with large star nozzle. Extrude the mousse into dessert glasses and serve garnished with Amarettini biscuits and the plums.
