220 g flour
2 tsp baking powder
pinch(es) salt
100 g almond paste
1  egg white
60  almonds
200 g apricot jam
50 g icing sugar

Instructions

Mix the butter, sugar, egg, lemon rind, flour, baking powder and one pinch of salt and knead until combined. Cover the dough and allow to chill for 2 hours.

On a lightly floured surface, roll out the dough to 3mm thickness. Cut out biscuits, 4*4 cm, with a lightly floured squarish cookie cutter. Apply on each biscuit a heap of almond paste and an almond on the top. Grease a baking sheet or line with parchment paper. Transfer the cookies on the tray and brush the top with egg white. Bake for about 12 minutes or until golden brown.
