Ingredients
100 g | butter |
70 g | sugar |
1 | egg |
½ | lemon, untreated, grated rind |
220 g | flour |
2 tsp | baking powder |
pinch(es) | salt |
100 g | almond paste |
1 | egg white |
60 | almonds |
200 g | apricot jam |
50 g | icing sugar |
Instructions
Mix the butter, sugar, egg, lemon rind, flour, baking powder and one pinch of salt and knead until combined. Cover the dough and allow to chill for 2 hours.Preheat the oven to 180°C.
On a lightly floured surface, roll out the dough to 3mm thickness. Cut out biscuits, 4*4 cm, with a lightly floured squarish cookie cutter. Apply on each biscuit a heap of almond paste and an almond on the top. Grease a baking sheet or line with parchment paper. Transfer the cookies on the tray and brush the top with egg white. Bake for about 12 minutes or until golden brown.
Remove from oven and place on a wire rack. Brush the almond pillows with lightly heated apricot jam. Allow the biscuits to cool completely on the wire rack then dust with icing sugar.
Store in an airtight container.
