Agate cove scones details
- Ingredients:
- 3 cups white flour
- 1 Tablespoon baking powder
- 1/2 pound unsalted butter, room temperature or softened
- 1/4 sugar (add at least 2 more Tablespoons)
- 3 eggs
- 1/3 cup buttermilk
- Fillings (choose one):
- 1 cup Craisins(sweetened dried cranberries) or raisins
- 1 cup strawberries, diced
- 1 cup blueberries
- 1 cup peaches, diced
Mix flour and baking powder in a bowl and set aside. In a large bowl, beat the butter until creamy. Add the sugar and beat until pale and fluffy. Add the eggs one at a time, beating after each addition. Add the flour mixture, mixing only until blended. Add the buttermilk; mix only until blended. Sprinkle the filling on top of the batter and fold it in.
Using a large scoop, scoop dough onto an ungreased baking sheet about 2 inches apart. Bake at 350 degrees for about 30 minutes or until a light golden color on top. Cool on a wire rack.
Yield: 12 scones
