- Ingredients:
- Six 8-inch corn tortillas
- 4 ounces green chilies, drained and chopped
- 1 red or yellow bell pepper, diced
- 2 cups pepper Monterey Jack and cheddar cheeses, grated
- 1 cup cheddar, grated
- 1/4 cup green onions (optional)
- 2 eggs, beaten
- 1-1/2 cups milk
- 1 Tablespoon cumin powder
Preheat the oven to 350 degrees.
Grease a round baking dish. Put a layer of tortillas on the bottom of the dish, completely covering bottom (ok to overlap). Repeat another layer (2 layers total), ending with diced bell peppers and chilies and onions (optional), topped with cheese. Combine the eggs, milk, cumin, and salt and pour slowly over the layers. Bake uncovered for 30 minutes or until the strata is slightly puffed and bubbly. Let the strata cool for 10 minutes before slicing.
