Ingredients

For the Filling:
2 large eggs, separated
2  egg yolks
raspberry jam
1 tbsp ground almonds
225 g unsalted butter
225 g caster sugar
For the pastry:
175 g plain flour
¼ tsp salt
100 g unsalted butter
1  egg yolk
3 tbsp very cold water

Instructions

To make the pastry:
Sift the flour and salt into a bowl. Cut in the butter with a knife or spatula until the mixture resembles breadcrumbs. Add the egg yolk and water. Bring the dough together as quickly as possible without over-handling.

Roll out about to line a greased 8-inch, 20cm pie dish. Chill in the refrigerator until required.

To make the filling:
Preheat the oven to Gas Mark 6, 220°C, 425°F.

Spread a layer of jam on the pastry base.

Beat the yolks and whites together until frothy.

Cream the butter with the sugar until light, add the almonds and the beaten eggs. Pour over the jam. Bake for 10 minutes and then reduce heat to Gas Mark 5, 180C, 350F and bake for another 50 minutes.

Allow to cool and serve warm.
