Zucchini tomato fans recipe details
Ingredients
4 narrow plum tomatoes |
4 small firm zucchini about 31/2 cm in diameter and 16cm long |
4 large cloves garlic peeled |
2 tbsp olive oil |
¼ tsp salt |
¼ tsp freshly ground pepper |
½ tsp herbes de Provence |
Instructions
Wash the tomatoes and cut each into 4 slices. Wash the zucchini and trim off the stem.Then, starting at the end of the stem cut each zucchini lengthwise into slices attached at the stem so they can be opened like a fan. Each should have 4 slices.
Arrange the zucchini side by side in a large roasting pan or cookie sheet. Tuck the slices of tomato between the zucchini slices.
Cut each garlic clove lengthwise into 8 thin slices. Place the garlic on the tomato and zucchini fan.
Brush the entire surface of the fans with the oil and sprinkle with salt and pepper, and herbs de Provence.
Bake for 30 minutes or until the zucchini are soft and the fans are nicely browned at 375°F/190°C. Using a large spatula, transfer the fans to four plates. Serve.
