Zucchini ribbons with mint recipe details
Ingredients
4 small | zucchini, ends trimmed |
1 tbsp | olive oil |
2 clove(s) | garlic, minced |
½ tsp | salt |
2 tbsp | fresh mint, chopped |
Instructions
Peel long thin ribbons from the zucchini.Heat oil in a saucepan over medium heat. Add garlic and sautee for 1 minute; discard. Increase heat and add zucchini. Season with salt and cook, stirring, just until zucchini starts to wilt, about 2 minutes.
Remove from heat and stir in mint.
