Zucchini pork stew recipe details

Ingredients
Serves: 4- 1 medium onion (see instructions below)
- 1/2 pound pork (can be any cut, but tenderloin is best)
- 1 teaspoon olive oil
- 4 cloves garlic, chopped finely
- 1 tablespoon fresh parsley, chopped finely
- 1 tablespoon fresh thyme, chopped finely
- 1/2 medium green pepper, chopped coarsely
- salt and pepper to taste
- 3 stalks celery, chopped coarsely
- 1 box organic chicken broth
- 1 medium zucchini, sliced then cut in half
- 1 can tomato paste
Preparation method
Prep: 30 mins | Cook: 1 hour1. Cut Onion in slices, removing the middle pieces and the outside slices, chopping them finely. Cut the remaining pieces in half so that you have thin semi-circles. Set these aside for later.
2. As far as the pork is concerned: If you want a thicker stew, then cut the pork in about ½ inch cubes. If you’d rather have more of a soup, then cut those pork cubes in half so that they’re thinner.
3. Heat olive oil on Medium in your favorite saucepan (make sure it’s large enough to hold all the ingredients). Add garlic and chopped onion once oil is hot and allow them to cook for a few minutes, but don’t let them brown. Add pork to the pan and allow pieces to cook on all sides (light brown, but not too dark). Add parsley, thyme, green pepper, celery, and onion slices. Allow to cook for about 4 minutes until onions start to soften. Add chicken broth (just enough to cover for a more stew-like consistency, or add a bit more to make a soup). Add zucchini and bring to a boil. Reduce heat to low and add Tomato Paste. Allow stew to simmer for about half an hour. Salt and Pepper to taste.
