Zucchini lemon muffins recipe details
Ingredients
220 g | flour |
100 g | granulated sugar |
2 tsp | baking powder |
1 tsp | baking soda |
100 g | zucchini, grated |
1 medium | egg |
60 ml | vegetable oil |
2 tbsp | lemon juice |
1 tsp | grated lemon peel |
Instructions
Preheat oven to 180°C. Line muffin pans with paper baking cups and set aside.Combine flour, sugar, baking powder and baking soda. Mix well and set aside.
In a medium mixing bowl combine zucchini, egg, vegetable oil, lemon juice and lemon peel. Stir well to combine. Add to flour mixture and stir until moistened.
Fill each baking cup with an equal amount of batter and bake for 20 minutes or until toothpick comes out clean.
Cool on wire rack.
