Lemon zucchini frittata recipe details
- Ingredients:
- 2 small zucchini, thinly sliced
- 2 small onions, thinly sliced
- 1 Tablespoon olive oil
- 8 eggs
- 4 to 5 fresh sage leaves
- 1/2 cup grated cheese
- 1/2 cup cream cheese
- zest of 1 lemon
- salt and pepper to taste
Saute zucchini, onions, and olive oil quickly over medium heat. Spread out in 9 x 13-inch ovenproof baking dish. Mix eggs, sage leaves, grated cheese, cream cheese, lemon zest, and salt and pepper. Pour over zucchini and onions. Serve hot or at room temperature with salsa.
