Zucchini basil soup recipe details
Ingredients
500 g | zucchini, trimmed and cut crosswise |
2 medium | onions, chopped |
2 clove(s) | garlic, minced |
60 ml | olive oil |
800 ml | water |
50 g | basil leaves, fresh or dried |
1 | vegetable stock cube |
Instructions
Cut zucchini with a knife into small pieces or use blender to cut.Sauté onion and garlic in oil in a heavy saucepan over low heat, stirring occasionally, until softened. Add chopped zucchini and stock cube and cook, stirring occasionally, 5 minutes. Add water and simmer, about 30 minutes.
Purée soup with basil in a blender if you prefer a smoother soup.
