Zesty venison chili recipe details
A friend gave me this recipe and I have been hooked ever since. What is really great about it, is that it is a smaller scaled down version of venison chili. Most venison chili recipes are for large numbers of people. I usually cook this for my family on a weekend and they eat on it for most of the day.

Ingredients
Makes: 1 gallon- 1 tablespoon vegetable oil
- 1 pound ground venison
- 3/4 cup chopped celery
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 1 1/2 teaspoons minced garlic
- 2 1/2 cups water
- 1 (6 ounce) can tomato paste (for thicker chili, optional)
- 1 (29 ounce) can tomato puree
- 2 (16 ounce) cans red kidney beans, drained
- 2 (16 ounce) cans pinto beans, drained
- 1 1/2 teaspoons dried parsley flakes
- 1 1/2 teaspoons Worcestershire sauce
- 1 1/2 teaspoons chili powder
- 1 1/2 teaspoons hot pepper sauce, or to taste
Preparation method
Prep: 20 mins | Cook: 1 hour1. Heat the vegetable oil in a large skillet over high heat. Stir in the ground venison, celery, onion, green pepper, and garli. Cook until crumbly and no longer pink, about 7 minutes.
2. Whisk the water and tomato paste together in a slow cooker until there are no large lumps of tomato paste remaining. Stir the venison mixture into the slow cooker with the remaining ingredients.
3. Cover, and cook, on High until the venison is tender 1 to 3 hours.Alternative cooking method:
The chili can be cooked on the stovetop 30 to 40 minutes.
