Zesty chicken taco soup recipe details
All the delicious flavors of a taco incorporated into a thick soup! Ground chicken replaces ground beef to make this a little healthier, and fresh avocado garnishes the top.

Ingredients
Serves: 4- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 tablespoon minced jalapeno pepper
- 1 small onion, diced
- 1 pound ground chicken
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 (14.5 ounce) can chicken broth
- 1 (28 ounce) can crushed fire-roasted tomatoes
- 3 tablespoons sour cream
- 1 tablespoon fresh lime juice
- salt to taste
- 1/2 cup shredded Cheddar cheese
- 1 cup crushed tortilla chips
- 1 avocado, diced
Preparation method
Prep: 15 mins | Cook: 20 mins1. Heat the olive oil in a soup pot over medium heat. Stir in the garlic, jalapeno, and onion. Cook and stir until the onion is tender, about 5 minutes. Stir in the ground chicken, and increase heat to high. Cook and stir until the chicken is no longer pink and begins to brown. Stir in the chili powder and cumin; cook for a few seconds.
2. Pour in the chicken broth and crushed tomatoes. Bring to a simmer, then reduce heat and continue simmering for 5 minutes.
3. Remove from the heat, and stir in the sour cream and lime juice. Season to taste with salt. Serve in bowls, and sprinkle with cheese, crushed chips, and avocado to serve.
