Yogurt and cherry chicken salad recipe details
Here’s my version of a mayo free chicken salad. The yogurt adds a delicious creamy tangy flavor.

Ingredients
Serves: 4- 2 Boneless, Skinless Chicken Breasts
- 2 cups chicken broth
- 3 tablespoons soy sauce
- 1/4 c. dried cherries, roughly chopped
- 1 stalk celery, diced
- 1/2 small onion, minced
- 1/4 c. hazelnuts, chopped
- 1/8 c. freshly squeezed lemon juice
- 3/4 c. Plain Yogurt
- sea salt and cracked black pepper
Preparation method
Prep: 15 mins | Cook: 15 mins | Extra time: 15 mins, cooling1. Poach chicken in a mixture of chicken stock with a few Tablespoons of soy sauce; drain. Cool the chicken and shred it by hand or with two forks.
2. Combine the cherries, celery, onion, hazelnuts, lemon juice, and yogurt. Mix shredded chicken with the yogurt mixture. Spoon onto your bread of choice and enjoy.
