Yoghurt mousse with kumquats recipe details
Ingredients
For the mousse: |
400 g vanilla yoghurt |
1 lime, organic |
1 packet(s) gelatine (instant gelatine) |
30 g sugar |
2 egg whites |
100 ml whipped cream |
For the sauce: |
200 g kumquats |
1 cinnamon stick |
1 orange |
Instructions
For the yoghurt mousse:In a bowl, mix for 1 minute the vanilla yoghurt with gelatin and the rind and juice of the lime. Add the sugar and mix again.
In 2 separate bowls beat the egg whites and the whipping cream.
As soon as the yoghurt mixture starts to set, mix it again. First add the whipped cream and then fold in the beaten egg whites. Pour the mousse in a bowl and allow to set in the refrigerator for 1 hour.
For the kumquat sauce:
Wash and slice the kumquats and put the seeds aside. Squeeze the orange.
Transfer the sliced kumquats in a small pot and dust with 3 tablespoons of sugar. Cook on medium-high heat until the sugar is lightly caramelised. Add the cinnamon stick and deglaze with the orange juice. Boil for 2 minutes, then remove from heat and cool.
To serve:
Divide evenly the yoghurt mousse into 4 dessert bowls and pour some kumquat sauce on top of each.
