Mixed fruit butter cake details
INGREDIENTS:Makes 5 loaves
360g butter, softened
330g castor sugar
6 eggs, lightly beaten
400g all purpose flour
2 tbsp baking powder
250g mixed fruits
20g mixed peels
Method:
- Prepare 5 moulds of 18 (L) x 8 (W) x 4.5 (H) cm. We used paper moulds. Preheat oven at 170-180 degC.
- Sift all purpose flour and baking powder into a mixing bowl. Set aside.
- Combine butter and sugar in a mixing bowl. Beat with paddle at medium speed until light and fluffy. Scrape bowl down periodically.
- Turn mixer to slow speed. Add beaten eggs gradually into the mixture, beating well after each addition. Scrape bowl down periodically.
- Fold flour mixture into batter and mix well. Finally, fold in mixed fruits and mixed peels.
- Divide batter equally into the prepared moulds. Bake at 180 degC until skewer inserted into centre of cakes comes out clean.
- Wrap cakes up in colourful clear plastic sheets. This cake can be an ideal choice of gift for Christmas.
