Yoghurt and bramble cake recipe details
Ingredients
150 g | soft butter |
175 g | sugar |
2 medium | eggs |
100 g | flour |
50 g | cornflour |
½ tsp | baking powder |
6 leaves | gelatin |
300 g | yoghurt |
200 g | whipping cream |
1 pack(s) | vanilla sugar |
1 pack(s) | jelly glaze |
500 g | brambles |
1 | lemon, juice |
Instructions
In a bowl, cream together the butter and 150g of sugar. Beat in the eggs, one after the other. Sift in the flour, cornflour and the baking powder and stir until well combined.Preheat the oven to 200°C. Pour the batter into a buttered cake form and bake for 25 minutes. Allow to cool.
Soak the gelatin in water. Mix together the yoghurt, 25g of sugar and the lemon juice. Dissolve the gelatin and combine with the yoghurt mixture. Allow to cool. Whip the cream with the vanilla sugar until stiff and fold the whipped cream and the pistachios in the yoghurt mixture.
Spread the cake bottom with the cream. Refrigerate for 3 hours.
Divide the brambles on top. Prepare the jelly glaze as advised on the package. Coat the brambles with the glaze.
