Yang Zhao fried rice is a popular Chinese dish that combines the flavors of savory and spicy in one delicious meal. Ingredients

400 g cooked white rice
20 g carrot, finely diced
100 g ham, finely diced
80 g green peas
2 medium eggs, lightly beaten
2 clove(s) garlic, finely chopped
2 sprig(s) spring onion, finely chopped
1 tbsp light soy sauce
1 tsp sugar
salt and white pepper, to taste
2 tbsp cooking oil

Instructions

Heat cooking oil in a pan or wok at medium-high heat, add in garlic and stir until brown. Pour in the egg and scramble slightly, pour in the rice and carrot when the egg is 40% cooked.

Stir the rice well for half a minute, add soy sauce, ham, green peas and cook until all is hot and coated evenly with soy sauce. Season with salt and pepper. Add in spring onion, turn off heat immediately. Mix well before dish out.

Serve with other Asian dishes.

Note:
It is best to use leftover one or two days old rice for fried rice. If freshly cooked rice is used, place the cooled rice in the fridge for at least an hour, uncovered. If hot fresh cooked rice is used, the result will be too soft and a bit sticky and that’s what we don’t want in a fried rice.
Original Yang Zhao fried rice uses Chinese BBQ pork instead of ham, but it’s impossible to get BBQ pork here where I live. Chinese BBQ pork is a little bit sweet. You can also substitute finely diced sausage for the ham.
