Wilted spinach salad recipe details
This is the original Wilted Spinach Salad as first served by The Cove restaurant in Los Angeles. The only addition is the optional hard boiled egg garnish.

Ingredients
Serves: 6- 1 large bunch fresh spinach
- 1/2 pound fresh mushrooms (canned mushrooms ok)
- 4 slices bacon
- 1/4 cup vinegar
- 1/2 teaspoon salt
- 2 cloves garlic
- 1/4 teaspoon fresh ground black pepper
- 1/4 teaspoon ground oregano
- 1/4 teaspoon dry mustard
- 1/4 teaspoon sweet basil
- 1/2 teaspoon sugar
- 2 hard boiled eggs, sliced (optional)
Preparation method
Prep: 35 mins | Cook: 14 mins | Extra time: 1 min1. Wash room temperature fresh spinach thoroughly; remove all stems from leaves; dry on paper towels. Turn dried leaves into a large salad bowl.
2. Wipe mushrooms with a damp cloth and slice lengthwise. Add to spinach.
3. Fry bacon until crisp. Remove from skillet and crumble coarsely. Set aside.
4. Combine vinegar, salt, garlic, pepper, oregano, mustard, basil and sugar. Heat bacon fat remaining in the skillet. Add vinegar mixture, pouring carefully so dressing does not spatter. Stir to mix ingredients. Heat thoroughly.
5. Pour hot dressing over spinach leaves, toss well and sprinkle with crumbled bacon, top with hard boiled egg.
6. Serve immediately.
