Joe's spicy bean and a lot more chili recipe details
Slow cooker recipe. Great comfort food. Beans, meat and plenty of natural spice. Serves as a main or side dish. Great for family gathering.
Ready in: 10 hours
Ingredients
Serves: 12- 1 pound pinto beans
- 8 cups water
- 1 onion, diced
- 1 bunch green onion, chopped (about 1 cup)
- 6 to 8 garlic cloves
- 1 1/2 to 2 teaspoons black pepper
- 1 teaspoon salt
- 4 to 6 jalapeno peppers, seeded and diced
- 2 large Anaheim peppers, seeded and diced
- 1 bunch cilantro. finely chopped (approx. 3/4 cup)
- 2 teaspoons olive oil (for browning pork tenderloin)
- 2 teaspoons granulated garlic (for tenderloin seasoning when browning)
- 1 large smoked ham steak, fat and bone removed, diced/cut to 1/2 to 3/4 cubes
- 1 smoked ham hock
- 1 smoked ham shank, cracked
- 1 (2 1/2 pound) pork tenderloin (usually two to a package, use both), diced/cut to ½ to ¾” cubes (remove fat while dicing)
Preparation method
Prep: 1 hour | Cook: 9 hours1. Place the ham shank into slow cooker and add enough of the water to create 1/2 an inch of water in a 7 quart slow cooker. Cover and turn on to Low.
2. Rinse beans, then in a large pot, combine beans with rest of water, ham hock, onions, cilantro, peppers, & garlic, and bring to boil. Boil for 10 minutes.
3. Transfer bean mixture to heated slow cooker.
4. Lightly coat diced pork tenderloin with olive oil, season with granulated garlic and brown in a large skillet over medium-high heat.
5. Add pork tenderloin and diced ham steak to slow cooker.
6. Cook on Low for 8 to 10 hours. When cooking time is complete, using tongs, remove the fat and bone from both the ham hock and ham shank. Take care to remove all bones (the bones will have cooked off and separated).Serving suggestion
Serve as a main dish (with tortillas) or as a side dish. Great side with Tri-tip.
