Wiener tafelspitz with apple horseradish sauce details
- Ingredients for Tafelspitz:
- 3 pounds round eye beef
- 1 orange carrot
- 1 yellow carrot
- 1 celery root
- 1 leek
- 1 parsley root
- Apple Horseradish Sauce:
- 3 to 4 apples
- Juice of 1/2 lemon
- 3 Tablespoons finely grated horseradish
- 1 teaspoon vinegar
- Sugar
- Salt
Tafelspitz: Bring water to a rolling boil in a pot large enough to fully submerge beef. Put beef and the above ingredients (thoroughly cleaned, but whole) into the boiling water. Simmer 1-1/2 hours until done. Remove and cut against beef fibers.
Apple Horseradish Sauce: Sprinkle peeled apple quarters with lemon juice. Bake at 350 degrees about 25 minutes until soft. Puree soft apples with horseradish and vinegar. Add sugar and salt to taste.
