Ingredients
250 ml | creme fraiche or double cream |
400 g | white chocolate, use the best possible |
225 g | white chocolate, low quality will do |
3 tbsp | unsalted butter, optional |
Instructions
A traditional French recipe obtained via an attendee at a French cookery course.Quantity produced does depend on size, but produces approximately 900 g of mixture. When I saw these they were about 4-5 cm in diameter. These are quite rich, and you would probably not wish to eat too many at a time.
Break the 400g of chocolate into fairly small pieces and place in a glass or steel bowl.
In a small saucepan heat the cream until just boiling, then pour onto chocolate and stir continuously until the chocolate has melted and well mixed. Add the butter now, if you wish. It will make the mixture more glossy.
Allow the mixture to cool until barely warm and then whisk it to thicken it. Alternatively cool it in the refrigerator and then whisk it. The mixture needs to be thick enough to shape.
Shape the mixture by rolling between two spoons, bowl to bowl, and place the completed balls onto parchment paper.
Melt the remaining chocolate in a bowl over a pan of simmering water. Using a spoon, quickly dip the balls into the melted chocolate and return to the parchment to harden.
Options:
After dipping the truffles into melted chocolate, you may wish to roll some or all in dessicated coconut.
Roll in grated white or milk chocolate after dipping.
Roll in cocoa powder after dipping for a slightly more bitter and traditional look.
