White bean stew recipe details
Ingredients
2 | tomatoes |
2 small | red chili peppers |
1 | onion |
2 | carrots |
6 tbsp | olive oil |
2 tbsp | tomato puree |
850 ml | water, hot |
salt and pepper | |
1 tsp | cumin |
1 tsp | thyme |
500 g | white beans, canned and drained |
Instructions
Peel and dice the tomatoes. Seed, halve, and finely slice the chili peppers. Peel and finely dice the onion. Peel and finely slice the carrots.In a saucepan, heat the oil and sauté the onions until lucent. Stir in the chili and carrots and sauté for one more minute. Then add in the tomato purée and the diced tomatoes and cook stirring for some minutes. Pour in the water and bring to the boil. Stir in the beans, cumin and thyme and mix well. Simmer over medium heat for 5 minutes and season to taste with salt and pepper.
Serve with rice or bread.
