Ingredients

500 g	white beans, cooked
500 g	chicken thighs, diced
2 l	chicken stock
2 tbsp	olive oil
2 medium	onions, chopped
200 g	green chiles
4 clove(s)	garlic, minced
100 g	Cheddar cheese, grated
2	jalapeno peppers, minced
3 tsp	cumin, ground
	salt and pepper, to taste
	sour cream

Instructions

Combine onions, garlic and jalepenos in a skillet and cauté in olive oil until soft. Add the diced chicken thighs and cook them for 10-15 minutes. Stir occasionally. Add the beans, chicken stock, green chilis, cumin and cayeene.

Let everything simmer over low heat for 2 hours. Cook for a bit longer to reduce the liquid.

Serve with grated cheese and a dollop of sour cream.
