Ingredients

2 kg	white asparagus, peeled
1	onion, chopped
400 g	mushrooms, sliced
200 g	single cream
4	smoked pork chops
½ bunch(es)	parsley, chopped
	salt and freshly ground black pepper
4 tbsp	oil
1 tbsp	flour
300 ml	vegetable stock
1 tsp	sugar
1 tsp	butter

Instructions

Cook the asparagus in salted water a pinch of sugar and a knob of butter for 10-15 minutes or until done, but still a bit firm to the bite.

In a pan heat 2 tablespoon of the oil and sauté the onion and the mushrooms for some minutes. Season with salt and pepper and dust with the flour. Cook stirring for 1-2 minutes. Pour in the cream and the stock and bring to a boil. Cook stirring for 5 minutes. Season to taste with salt, pepper and sugar.

In a large pan heat the remaining oil and fry the pork chops from both sides for 2 minutes.

Arrange the cooked asparagus, the meat and the mushroom sauce on a large serving plate, sprinkle with parsley and serve with boiled potatoes.
