White asparagus with smoked pork chop and mushroom sauce recipe details
Ingredients
2 kg | white asparagus, peeled |
1 | onion, chopped |
400 g | mushrooms, sliced |
200 g | single cream |
4 | smoked pork chops |
½ bunch(es) | parsley, chopped |
salt and freshly ground black pepper | |
4 tbsp | oil |
1 tbsp | flour |
300 ml | vegetable stock |
1 tsp | sugar |
1 tsp | butter |
Instructions
Cook the asparagus in salted water a pinch of sugar and a knob of butter for 10-15 minutes or until done, but still a bit firm to the bite.In a pan heat 2 tablespoon of the oil and sauté the onion and the mushrooms for some minutes. Season with salt and pepper and dust with the flour. Cook stirring for 1-2 minutes. Pour in the cream and the stock and bring to a boil. Cook stirring for 5 minutes. Season to taste with salt, pepper and sugar.
In a large pan heat the remaining oil and fry the pork chops from both sides for 2 minutes.
Arrange the cooked asparagus, the meat and the mushroom sauce on a large serving plate, sprinkle with parsley and serve with boiled potatoes.
