Pineapple thai pan seared chicken recipe details
This sweet and spicy, pan-seared chicken breast marinade has a hint of pineapple and ginger. This recipe won first place in the MTR chicken marinade category at the PNWBA Washington State Spring BBQ Championship in 2012.

Ingredients
Serves: 6- 2 cups Thai chili sauce
- 3 ounces pineapple juice
- 2 ounces chipotle peppers in adobo sauce, minced
- 1 tablespoon fresh lime juice
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons pepper
- 6 boneless, skinless chicken breasts
Preparation method
Prep: 10 mins | Cook: 35 mins | Extra time: 15 mins, marinating1. Place the chili sauce, pineapple juice, chipotle pepper, lime juice, salt, and pepper in a saucepan. Bring to a boil, then turn down and simmer for 15 minutes. Cool the marinade.
2. Marinade the chicken breasts in the cooled sauce at least 15 minutes.
3. Remove the chicken breasts from the marinade, and pan sear 5 minutes per side. Finish on a barbeque at 350 degrees F for 10 minutes.
