Heavenly Pancakes with Apricot-Brandy Sauce recipe
- 1 cup ricotta cheese
- 3 eggs, separated
- 2/3 cup milk
- 1/2 cup flour
- 1 teaspoon baking powder
- dash of salt
- Apricot-Brandy Sauce:
- Apricot preserves
- 1/4 cup fresh orange juice
- Apricot brandy
Combine ricotta and egg yolks. Mix in milk. Add dry ingredients. Fold in beaten egg whites. Cook on hot griddle. Serve with apricot-brandy sauce and bacon curls.
Apricot-Brandy Sauce:Combine apricot preserves with orange juice. Melt in microwave or on stove top to syrup consistency. Add apricot brandy to taste. Serve warm.
