Westmorland sweet pie recipe details
Ingredients
125 g | raisins |
60 g | currants |
30 g | candied orange peel |
30 g | candied lemon peel |
75 g | lean lamb, finely diced |
250 g | flour |
5 tbsp | soft lard |
1 tsp | ground mixed spice |
75 ml | water |
Instructions
In a bowl, mix together the lard and the flour. Add a pinch of salt and the water. Knead until well combined. Form to a ball and wrap with cling film. Place into the fridge for at least 30 minutes.Preheat the oven to 180°C.
In a bowl, mix together the raisins, currants, candied peel and the meat. Season with mixed spice. Fill the mixture into a pie dish and cover with aluminium foil. Bake for 50-60 minutes.
Roll out the pastry on a floured surface. Cover the pie dish with the pastry and garnish with the trimmings. Slice a steam hole in the middle of the pastry lid. Switch the heat to 200°C. Bake until the pie is golden.
